BLW Sweet Potato Pancakes Recipe

Sweet potatoes have a wonderful flavor and a smooth consistency. Therefore, kids adore them. Plus, they are not to be found on the list with foods that may cause allergies.

- sweet potato - gluten-free flour - baking powder - eggs - vegetable milk - coconut oil - cinnamon - vanilla extract


Peel and cut ½ sweet potato. Place in a small pot and cover with water. Bring to a simmer and cook for 15 minutes, until tender.


Place all the ingredients into a large bowl and whisk well until you get a smooth batter. Alternatively, use a hand electric mixer and combine everything well.

Heat a non-stick pan. Add about 2 tablespoons of batter for a pancake. Add more pancakes in the pan at a time, depending on the size of the pan.
